Just put that baby into a jar with some of the kombucha to live off of and cover with cheesecloth. Secure with a rubber band. (See step 8 for reasons why.) Give it a week or so, and it will grow. Then you... Or better yet, you can feed your scoby hotel with tea from “finished” batches of kombucha right after you finish a first fermentation cycle. That way your hotel is always getting a good amount of kombucha tea to keep the scobys moist and you’re essentially creating a well of super-charged starter tea you can use for all your future batches of kombucha.

Kombucha is a fermented beverage made from sweet tea using a "mother" or SCOBY (Symbiotic Colony of Bacteria and Yeasts). RULES. Check the FAQ before you post anything.... The dark stringy stuff is yeast. I 'rinse' my scoby every few batches with some kombucha liquid to get rid of the excess stringy stuff. As long as your brew isn't showing signs of yeast overgrowth, (this guide has fantastic information about balancing bacteria and yeast) the dark strands are fine to leave alone.

The White Spot above is the real kombucha SCOBY forming but it looks like its losing overall. ON the Left, the SCOBY seems to be forming only on the outside ring.Something else is controlling the center.
- To do this, simply add your leftover scoby to a glass jar, cover it with finished kombucha liquid, and close the jar using a lid (not a towel) to prevent the kombucha liquid from evaporating (a metal lid is okay as long as the liquid isn't touching the lid). Store the jar in a warm, dark place.
